  1. Get 5-6 dry kokum
  2. Get 3 tbsp jaggery
  3. Take 2 1/2 cup water
  4. Get 1/2 tsp black salt
  5. Take 1/4 tsp salt(as required)
  6. Take 1 tsp cumin seeds
  7. Prepare 1 tbsp ghee
  8. Make ready 2 green chillies
  9. Get 2 tbsp grated fresh coconut
  10. Take 1 tbsp roasted groundnut
  11. Prepare 1 inch ginger

It aids digestion and hence this Kokum saar makes for an appetizing as well as healthy drink. Kokum or Ratamba is a traditional souring agent widely used in Maharashtrian cuisine. Botanically named as Garcinia indica this gorgeous looking. Garcinia indica, a plant in the mangosteen family (Clusiaceae), commonly known as kokum, is a fruit-bearing tree that has culinary, pharmaceutical, and industrial uses.

Instructions to make Kokum saar:
  1. Soaked kokum in a hot water for 20 minutes. Squeeze and strain it.
  2. Add water, jaggery and salt into the kokum juice and heat it till the jaggery gets dissolved. You can adjust the quantity of jaggery as per the taste.
  3. Grind coconut, groundnut, 1 green chilli, ginger into fine paste.
  4. Add this paste to the kokum water. Stir well.
  5. Heat the ghee in a small pan. Add cumin seeds, finely chopped green chilli.
  6. Pour this tempering (tadka) over kokum mixture.
  7. Kokum Saar is ready. Serve it with steamed rice. During fasting you can serve it with bhagar.
