  1. Heat the oil in a pan. Add in the shallots and garlics. Fry until fragrant.
  2. Then add in the turmeric, gallangal and ginger. Fry until fragrant.
  3. Add in the lime leaves, lemongrass and bay leaves. Fry again until they release aroma.
  4. Then add in the fish as well as the water.
  5. Add the seasonings. Taste test.
  6. Simmer for 5 minutes.
  7. Add in the tomatoes, basil leaves and green onion. Cook for 15 more minutes. Do not over mix because the fish might go mushy.
  8. Turn off the heat. Serve.
