  1. Cut the aubergine in half and salt. Leave for 10 minutes to soften
  2. Place on baking sheet and roast for 15 mins at 180C (fan assisted)
  3. Slice the onion thinly and cut the tomatoes in quarters and sprinkle with oregano, salt & pepper to taste and a little olive oil and mix
  4. When the aubergines are ready, lightly push the soft flesh down and place the seasoned onion and tomatoes inside
  5. Crumble the feta cheese on top and add a little more oregano
  6. Place back in the oven at 180C and cook for 15-20 minutes

Halve the aubergines/eggplants lengthways, leaving the stalk on. Heat oil in a heavy-based saucepan, add the onions and garlic and cook until they begin to colour.
