  15. Make ready 4 tablespoons olive oil
  16. Get salt to taste

Arrange on a baking sheet and sprinkle with salt and Aleppo pepper, if using. Don't chop the veggies too small, or they'll loose their mega crunch factor. We ate this as a main for lunch, so I tossed in some cooked, shredded chicken. If serving as a side, omit the chicken.

Instructions to make Fattoush, as Light as it gets!:
  1. Mix all the vegetables together in a large bowl and sprinkle with the sumac.
  2. Mix all the ingredients of the dressing together and pour over the vegetables.
  3. Mix the vegetables and dressing until well combined. Then, add the toasted pita bread pieces and toss gently.
  4. Serve immediately and if you want to prepare ahead of time, add the bread pieces just before serving.

We ate this as a main for lunch, so I tossed in some cooked, shredded chicken. If serving as a side, omit the chicken. Lebanese Fattoush salad gets a seasonal make-over with fresh sweet snap peas and radishes instead of tomatoes and peppers. This salad has toasted whole-grain pita dusted with sumac, crumbled feta and mint in it! Arrange on a baking sheet and sprinkle with salt and Aleppo pepper, if using.
