  12. Get 100 grams Rajma dhanya (white,brown optional)
  13. Get 2 cup Oil
  14. Prepare 1 tbsp Turmeric powder
  15. Make ready 2 tbsp Red chilli powder
  16. Make ready 2 tbsp Ginger garlic and chilli paste
  17. Prepare 2 tbsp Sesame seeds
  18. Take 1 tsp Carom seeds (ajwain)
  19. Prepare 2 tbsp Grated coconut (dry/fresh)
  20. Make ready 2 tbsp Peanut powder
  21. Take to taste Salt
  22. Prepare 2 tbsp Coriander and cumin powder
  23. Take 3 tbsp Undhiyu masala
  24. Take 2 cups Coriander finely chopped
  25. Get 2 tbsp Lemon juice
  26. Make ready 1 tbsp Sugar
  27. Make ready 1 tsp Garam masala
  28. Prepare 1 tbsp Mustard seeds
  29. Prepare 1 tsp Cumin seeds
  30. Get 1 tsp Asafoetida
  31. Take For muthiya:
  32. Make ready 1/2 cup Fenugreek leaves :finely chopped
  33. Make ready 1 cup Gram flour
  34. Take 1 cup Whole wheat flour
  35. Take 1 tsp Red chilli powder
  36. Take 1 tsp Turmeric
  37. Prepare to taste Salt
  38. Get 1 tsp Sugar (optional)
  39. Get 1 small spoon curd
  40. Prepare 1 tsp Oil
  41. Prepare pinch Baking soda:
Steps to make Kathiyawadi Undhiyu:
  1. Method For muthiya Mix all the above ingredients well. And make small balls out of it. Heat oil and deep fry it untill it become golden brown and crispy. Drop muthiya on absorbent paper and set aside.
  2. Method of undhiyu: First of all Fry yam,suran,sweet potatoes,arbi and raw banana and all the veggies and potatoes golden brown on medium flame (except brinjal) Now take all above mention spices. Mix it well. Now semi cut brinjal horizontally and vertically. - Fill this stuffing in brinjal.
  3. Now heat oil in pressure cooker. Add mustard seeds. Let it cracker. Then add cumin seeds and pinch of asafoetida. Add all veggies. Add stuffed brinjals. Add masalas. Add muthiya. Mix it well. Pressure cook it for 6 to 8 whistle.
  4. Our undhiyu is ready. Garnish it with sev and coriander leaves. And enjoy this drolling,tasty and mouthwatering famous gujarati undhiyu with puri or fhulka rotis friends
