  2. In a bowl whisk cream cheese and icing sugar till soft. Add the double cream and whisk till thick. Pour in to the crust and spread it evenly. Chill for a minimum of 1 hour.
  3. For the topping, prepare the jelly as per packaging instruction and leave to cool. Top the cheesecake with thinly sliced strawberries. Pour the jelly over the strawberries and chill till set.
  4. Serve with fresh whipped cream.
