  1. Prepare 500 gram lauki/bottle guard
  2. Get 3 cup whipped curd
  3. Take 2 tbsp malai/homemade cream
  4. Prepare 1 tsp ginger green chilli paste
  5. Take 1 green chilli slit and cut into 2 long piece
  6. Get 1 tsp kasuri methi
  7. Get 1 medium size onion chopped
  8. Prepare 2 tbsp oil
  9. Prepare 1 tsp cumin seeds
  10. Prepare 1/2 tsp fennel seeds
  11. Get 1 pinch hing/asafoetida
  12. Make ready 8-10 curry leaves
  13. Get 1/2 tsp haldi (Turmeric)powder
  14. Get 2 tsp coriander powder
  15. Prepare 1 tsp red chilli powder
  16. Get 1 tsp garam masala powder
  17. Take to taste Salt
  18. Prepare as needed Coriander leaves for garnishing
Instructions to make Sabzi Lauki Dahiwali:
  1. Take curd, malai and whisk it vigorously and keep aside.
  2. Wash and peel the bottle gourd and cut into desired shape and size.
  3. Collect all ingredients for sabzi.
  4. Heat oil in a kadai add hing, cumin seeds, curry leaves, fennel seeds.
  5. Let the cumin seeds crackle add ginger, green chilli paste, silt green chilli and onion and saute for few seconds.
  6. Then add kasuri methi and mix well.
  7. Now add lauki and mix well
  8. Now add all powdered masala and saute it on low flame. Add little water to prevent masala from burning.
  9. Close lid and cook for 5 minutes. And then pour curd mixture and stir till boiled.
  10. Let simmer for 5 minutes. Remove from heat and garnish with coriander leaves.
  11. Delicious dahiwali lauki ki sabzi is ready to be served. Serve hot with roti.
