The ingredients needed to make Kathal Masala Sabzi:
  1. Take 400 gms Kathal (Raw jackfruit)
  2. Make ready 3 Medium Onion (Thin sliced)
  3. Prepare 2 (½ Cup Puree form) Large Tomatoes
  4. Prepare 1/2 Teaspoon Asafoetida (Hing)
  5. Prepare 1 Bay Leaf (Tej patta)
  6. Make ready 4 Cloves Garlic
  7. Make ready 1 " Ginger
  8. Make ready 1/4 Cup Fresh curd
  9. Make ready 1 " Cinnamon stick (Dalchini)
  10. Get 2 Black Cardamom. (Badi Elaichi)
  11. Get 2 Teaspoon Coriander Powder
  12. Take 1/2 Teaspoon Turmeric Powder
  13. Prepare 1/2 Teaspoon Garam Masala Powder
  14. Take 1/2 Teaspoon Cumin Powder
  15. Prepare 1/2 Teaspoon Red Chilli Powder
  16. Prepare 2 Tablespoons Mustard Oil
  17. Get as per taste Salt
  18. Take 2 Tablespoons Fresh green coriander leaves to garnish
Instructions to make Kathal Masala Sabzi:
  1. As always table all ingredients together for easier and hassle free cooking.
  2. In order to cut jackfruit effortlessly and making it less sticky and avoid latex or sap fall; palm your hands and knife with mustard oil, cut into two halves and the one half cut into 4 pieces below any old newspaper to let milky sac fall on the same.
  3. Peel out jackfruit scales and cut inner portions and place them in salt water to avoid them getting darker, fry in Kadai to make them crispier and transfer in separate plate.
  4. Now in Kadai heat a oil and add asafoetida, add onions and fry to they get brown colour also add bay leaf, Cinnamon stick along with garlic cloves and ginger.
  5. In a separate bowl mix curd with fresh tomato puree and add all turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala powder. Now pour some water to it, stir to combine it well.
  6. Once the onion has turned brown, add the prepared curd masala in the kadai, Add the  kathal (raw jackfruit) to the masala, add salt as per taste and stir well to combine.Add extra cup of water, cover the kadai with lid to allow cooking of the yummy Kathal Masala Sabzi for 5 minutes and turn off the heat. Allow the sabzi to cook naturally.
  7. Once it is properly cooked, garnish it with fresh coriander leaves and serve hot with Parathas or chapatis and even Jeera rice.
