Instructions to make White Chocolate and Cherry Cake:
  1. Pre heat oven to 170 degrees Celsius and separate the eggs.
  2. Met the white chocolate gently over a double boiler and then combine with the butter and beat until soft and creamy.
  3. Beat the egg yolks and castor sugar into the chocolate mix.
  4. Sift the flour and fold it into the chocolate mix.
  5. Beat the egg whites, salt and vanilla together and fold it into the chocolate mix.
  6. Bake for 25 to 30 minutes and leave to cool.
  7. For the filling: cook down the tinned cherries (liquid and all), cornstarch and cherry liquor until it reaches a jammy texture. Leave to cool.
  8. For the icing: whisk the egg whites and sugar over a double boiler until all the sugar is dissolved. Whip the egg white mixture until fluffy and then add the butter a little at a time. Once all the butter is incorporated, add the cherry liquor.
  9. Assemble the cake and decorate with white chocolate shavings.
