The ingredients needed to make Swedish bread:
  1. Get 350 ml milk
  2. Prepare 2 tsp dry yeast (25g fresh)
  3. Make ready 1 tsp salt
  4. Get 100 ml golden syrup
  5. Prepare 50 g soft butter
  6. Take 150 g rye flour
  7. Make ready 400 g plain or strong wheat flour
  8. Take For brushing (optional)
  9. Make ready 2 tbsp golden syrup
  10. Make ready 1 tbsp hot water
Steps to make Swedish bread:
  1. Warm the milk up a bit (37 degrees) and mix with yeast, salt and syrup. Add the flour and butter and knead for 10 minutes (this dough is quite sticky but if it gets a bit too sticky just add some more flour).
  2. Let rise under a towel until it's doubled in size, about 1 hour. Shape into a loaf and put in a tin if you've got one, otherwise just put it on a baking tray with some grease proof paper.
  3. Let rise for another hour and then bake in the oven at 190 degrees for 50 minutes. If the bread gets a bit too dark in the oven, put some aluminium foil over it (I had to do this halfway through).
  4. Mix syrup and water and brush the bread with the solution while the bread is still hot. This step is optional, but that shiny sweet crust is really nice 😋
