  1. Get 1 yellow onion (sliced)
  2. Get 5 kaffir lime leaves

  15. Make ready 1 small ladle of evaporated milk (F&N brand)
  16. Make ready 10 tbs fish sauce (Knife brand)
  17. Make ready 5 cups water

Tom Yum Goong Nam Kon is usually a red-colored soup through the addition of nam prik pao or oily chili paste which is a similar color to the red oils that come from the shrimp heads as they cook. It may or may not come out with added evaporated milk depending on the restaurant. Tom yum goong should have shrimp flavor, not chicken! Unfortunately, for the true taste, it is difficult to substitute anything for the kaffir lime leaves.

Steps to make Tom Yam Goong:
  1. Bring the water to boil along with onion, coriander stem, lemongrass, kaffir lime leaves, chilli, dried chilli and carrots.
  2. When boiling, add the tomyam paste, evaporated milk, and fish sauce. Salt and sugar(if needed) to taste. Add the chicken as well.
  3. When chicken almost cooked, add the tiger prawns, oyster mushroom,tomato and lime juice.
  4. Serve hot with Thai fragrant rice.

Tom yum goong should have shrimp flavor, not chicken! Unfortunately, for the true taste, it is difficult to substitute anything for the kaffir lime leaves. The richness of the sour taste comes from the complement of the different citrus flavored ingredients. I serve this soup directly into individual bowls for each person. Kaffir lime leaves have an aromatic citrus-like smell and flavor.
