  1. Get 1 kg mutton
  2. Get 2 onion
  3. Make ready 2 tomatoes
  4. Make ready 2 tbs Ginger garlic paste
  5. Prepare 1/2 cup fresh coconut paste
  6. Take 2 tbsp Red chilli powder
  7. Prepare 1 tsp haldi / turmeric
  8. Get 1 sprig Curry leaves
  9. Make ready to taste Salt
  10. Make ready 6 tbsp (approximately) Coconut oil for cooking
  11. Prepare Garam masala (cinnamon, cloves, cardamom, jeera cumin), black pepper)
  12. Take 1 TSP Coriander powder,star phool (star anise)
  13. Take Garnish
  14. Take 1 sprig Curry leaves
  15. Prepare 4/5 Green chilli
  16. Get as needed Ginger Julienne
  17. Prepare as needed Fried onions

Add spice powders including Kashmiri Red Chili powder (for its colour), red chilli powder, coriander. Wash the mutton pieces thoroughly, drain the water completely and set aside. Heat coconut oil in a pressure cooker, add in the coconut slices and saute Add in the chopped ginger, garlic, green chilies, curry leaves and saute until the raw smell disappears. Wash the mutton pieces well and cut it into small pieces.

Steps to make Kerala style mutton curry:
  1. Wash and keep mutton aside,(if you are not in hurry marinate mutton for 1/2 hour or more with salt,black pepper & haldi, ginger garlic paste,lemon juice optional).
  2. Heat oil in cooker or pan add coconut oil,then add jeera, star phool,dalcini,long.then add sliced onions,fry for some time.add mutton and haldi.
  3. Cook for a while add ginger garlic and coconut paste.mix well add chopped tomatoes cook again.now add garam masala powder.cover the lid and cook for 1 hour or pressure cook for 2 whistle.
  4. Use fresh coconut or coconut milk. Keep checking the mutton if cooking in pan,do not add extra water,thick gravy will taste best with Malabar paratha,and jeera rice.
