  1. Wash, peel and grate carrots with grater. Remove yellow middle part.
  2. In a big heavy bottom kadai heat ghee. Add grated carrot and saute for 3-4 minutes.
  3. Add milk and mix it. cook until milk reduced. It takes much time. Stir in between.
  4. When milk is reduced upto 70-80%, add sugar and almond cashew flakes and mix well. Add homemade malai and mix well.
  5. Now keep the flame low and stir continuously else it may stick at the bottom. Cook till all watery part evaporates. Last add cardamom powder and mix well. Delicious gajar ka halwa is ready to serve. Garnish with almond cashew flakes. You can serve it hot or chill.
