The ingredients needed to make Aviyal-Kerala style:
  1. Take 100 gms beans, carrot, potato, Pumpkin, Brinjal
  2. Make ready 7-8 green chilies
  3. Take 1 cup curd, 1 ts-Thuvaran dal,1 cup coconut(grated)
  4. Prepare 1 bunch curry leaves
  5. Prepare 2 ts salt, turmeric powder, mustard, coconut oil, jeera

Avial or Aviyal is a traditional Kerala side dish served as an accompaniment to rice. Avial has a unique position in Kerala as well as Tamil cuisine. It is a mixture of all kind of vegetables except soft. Kerala Style Avial is ready to serve.

Instructions to make Aviyal-Kerala style:
  1. First cut all the vegetables and bake it in the steamer along with salt and turmeric powder.
  2. In a mixer grinder add, coconut, green chilies, jeera and soaked thuvaran dal, make it into smooth paste.
  3. In a pan add the baked vegetables, curd, grinded paste and a cup of curd. Then cook for 5 minutes.
  4. In a frying pan add coconut oil allow mustard to crack add curry leaves and add this to avial.
  5. Aviyal is ready to taste.

It is a mixture of all kind of vegetables except soft. Kerala Style Avial is ready to serve. After the addition of coconut oil, make sure to close the lid of the utensil and allow the gravy to absorb the coconut oil before you serve. Avial (Malayalam: wikt:അവിയല്‍, pronounced [aʋijal]) is a dish which originated from Kerala, although it is equally popular in South Canara region of Karnataka and Tamil Nadu. Aviyal or Avial is a traditional Kerala side dish of mixed vegetables served with rice.
