  1. Make ready 1 cup cooked rice
  2. Make ready 1/2 cup grated fresh coconut

  5. Prepare 1 tsp cumin seeds
  6. Make ready 1 tsp chana dal

  12. Prepare 5-6 curry leaves

An ideal dish for lunch box,which i normally prepare once a week. When it is done add it on the top of the rice. Add the ghee in the same kadai and fry the scrapped coconut till golden brown. Today, I prepared South Indian style coconut rice for lunch.

Instructions to make Thengai sadam/coconut rice:
  1. Heat 1tbsp coconut oil in a wide pan over medium heat.
  2. Add 1tsp mustard seeds,1tsp cumin seeds,5-6 curry leaves,1 tsp urad dal,1tsp chana dal,a pinch of hing to hot oil.
  3. When seeds starts spluttering add chopped green chilli,2 whole red chilli,9-10 cashew nuts and fry till cashew turns lightly brown.
  4. Add 1/2 cup grated coconut and cook for 2-3 minutes,until coconut turns light brown.
  5. Now add salt to taste and cooked rice to the mixture.
  6. Mix everything together.
  7. Serve the coconut rice hot with rasam or curd.

Add the ghee in the same kadai and fry the scrapped coconut till golden brown. Today, I prepared South Indian style coconut rice for lunch. It was quick to prepare and I had time to attend few odd jobs before Nehal returned home from school.
