Instructions to make Udupi sambar:
  1. Wash and Cook thoor dhal in a pressure cooker with turmeric powder. Mash and keep.
  2. Heat a pan, add 1tsp oil, fry all the dry ingredients and remove pan and add coconut, mix, let it cool. Grind as paste
  3. In a vessel cook the vegetables until soft, add mashed dhal, ground paste, jaggery, salt to taste, and add tamarind juice.
  4. Let it boil for few mins, now tempering the sambar with mustard seed, chilli, curry leaves. If you like add 1tbs of ghee to add more flavour
