Hey everyone, hope you are having an amazing day today. Today, we’re going to prepare a special dish, tripe (matumbo). One of my favorites. For mine, I’m gonna make it a little bit unique. This will be really delicious.

Tripe (matumbo) is one of the most popular of current trending foods on earth. It’s appreciated by millions daily. It is easy, it is quick, it tastes delicious. They are fine and they look fantastic. Tripe (matumbo) is something that I have loved my whole life.

On this video I'm demonstrating how to make Matumbo(tripe) into a delicious meal and made extra tasty using the new improved Tropical Heat curry powder. In Kenya matumbo (tripe) is very affordable and if done properly can be one of the tastiest dishes ever. This matumbo stew is thick and hearty and also. This is a simple, creative and healthy method of cooking matumbo(tripe).

To get started with this recipe, we have to prepare a few components. You can have tripe (matumbo) using 8 ingredients and 3 steps. Here is how you cook that.

The ingredients needed to make Tripe (matumbo):
  1. Take 1 kg tripe (matumbo)
  2. Take 1 large onion diced
  3. Prepare 3 large tomatoes diced
  4. Make ready 3 tbs cooking oil
  5. Prepare 1 tbs tomato paste
  6. Take 1 bunch coriander chopped
  7. Get Salt
  8. Make ready Black pepper

Tripe (known as Matumbo in Swahili) may not be everyone's favourite thing to eat but for those who. Tripe is a type of edible lining from the stomachs of various farm animals. Most tripe is from cattle and sheep. Well you are in for a huge treat.

Instructions to make Tripe (matumbo):
  1. Wash and cut tripe into small pieces. Put in a pressure cooker, add water 11/2 cup place on heat and boil until soft. Remove from heat and drain the water.
  2. In a separate sauce pan place on medium heat, add oil, add onion. Cook onions until soft, add tomatoes and half of the chopped coriander stir and cook until tomatoes break to a paste
  3. Add the boiled tripe and stir. Add the tomato paste, salt and black pepper. Simmer for 10min turn off the heat and sprinkle the remaining chopped dhania. Serve hot with ugali.

Most tripe is from cattle and sheep. Well you are in for a huge treat. Tripe,popularly known to most Kenyan households as Matumbo is one of the most affordable source of proteins and other nutrients. I use Blanket Tripe, as that is most like Goat Tripe, and what I have seen in many photos of Matumbo made in Kenya. When selecting what to buy, try find one that has been cleaned and looks fresh. its however important to note that you also need to clean it further after you get home.
