  1. Get 1 kg tripe (beef or sheep) washed and cut into pieces
  2. Prepare Water as needed (enough to cover tripe to start)
  3. Take 4 potatoes, peeled and cut into quarters
  4. Get 1 onion, chopped
  5. Prepare 2 garlic cloves, crushed
  6. Prepare 2 tbsp curry powder
  7. Prepare to taste Salt
  8. Make ready Cayenne pepper to taste (optional)
  9. Prepare 1 packet brown onion soup mix
Steps to make Traditional Tripe and Potato Stew:
  1. Cover the tripe with water and simmer for approximately 3 hours.
  2. Add the potatoes, onions, garlic, curry powder, salt and cayenne pepper. Stir to mix it all in.
  3. Mix onion soup with a dash of water to form a paste. Add to the stew.
  4. Add more water as needed if stew starts to dry. Simmer pot for 30 minutes or until potatoes are fully cooked.
  5. Serve hot over pap or samp.
