Hello everybody, it’s me, Dave, welcome to my recipe site. Today, we’re going to prepare a distinctive dish, pineapple, ginger and chicken rice. One of my favorites. For mine, I’m gonna make it a bit tasty. This will be really delicious.

This is a long video guys. It took me a week to try to edit it with iMovie messing up. Hopefully you get the gist of what I was doing. This Ginger Pineapple Fried Rice is a great rice side dish for shrimp, pork, or chicken that calls for starting with chilled, cooked rice.

The ingredients needed to make Pineapple, Ginger and Chicken Rice:
  1. Prepare 1 large chicken breast
  2. Get 2 tbsp soy sauce
  3. Get 2 tbsp oil
  4. Get 1 clove garlic, finely chopped
  5. Take 1 tbsp fresh ginger, finely chopped
  6. Get 1 carrot, small diced
  7. Make ready Handful green beans
  8. Get Half red pepper
  9. Make ready 2 rings of pineapple, small diced
  10. Get Handful mangetout
  11. Take 50 g sweetcorn
  12. Get 65 g brown rice

Tips: Use day old COLD rice and break it up with your hands before adding. Use light soy instead of regualr soy as per my oriinal recipe. Meanwhile, to make the pineapple chicken, put the chicken in a bowl and season with salt and black pepper. Add the cornflour, mix well to coat and set aside.

Instructions to make Pineapple, Ginger and Chicken Rice:
  1. Toss the chicken in some salt and pepper to season then let marinade in the soy sauce and set aside.
  2. Heat 1 tbsp of the oil in a frying pan over a medium heat
  3. Add in the garlic and ginger, cooking for 1 minute until softened
  4. Add the rest of the oil to the pan with the chicken pieces and cook until sealed on all sides
  5. Add the carrot, pepper and green beans and cook a further 2 minutes until the chicken is browning before adding mangetout, sweetcorn, pineapple and cooked rice
  6. Drizzle fresh soy sauce over, stir through then serve

Meanwhile, to make the pineapple chicken, put the chicken in a bowl and season with salt and black pepper. Add the cornflour, mix well to coat and set aside. Drain juice from pineapple into glass measuring cup. With the addition of pineapple, the regular chicken fried rice becomes so much more interesting, and delicious, because of the sweet tang of the pineapple. What I love most about this chicken and pineapple fried rice is the slightly caramelized taste of the pineapple, after stir-frying in the wok.
